OK. Like a big girl now.

I feel like I am just now getting the sleep I've needed.
I had a cold all last week, and that made it hard to get a full nights sleep. I also had fundraiser I was helping with the library that took place on Sunday afternoon. On top of that Monday is one of my longer, and more difficult days at work.
For those reasons Tuesday is a welcomed blessing.
I got in bed at ten and slept all the way up to about seven.
I am now ready to get back to the things that need to be done. Which are school work and down sizing my room.
On a non related note I have become obsessed with "All things considered" on NPR. I have listened to to it almost every morning, and have even found some back issues. I get all aspects of the news on one station. Of course I am not the only to have discovered this, but I have found very few of my friends enjoy this network. Why is this?
Anyways, back to the Tuesday at hand. As I said, Mondays are a harder day at work and for that reason any other day seems easier in comparison. So I am ready to fully enjoy my day.

you can forget about a carrer with halmark.

For valentines day my younger sibs and I made a dinner for my parents. The dinner had to be without gluten because my dad can't have gluten.
Most of my desert recipes have gluten in them so it was hard to fined something everyone could eat.
So here is what I came up with for valentines day dinner:
Yogurt with honey and walnuts
6 servings
2 1/2 cups yogurt cheese
1/2 chopped walnuts
about 6 tablespoons honey
to make the yogurt cheese, put the 2 cups of yogurt in a coffee filter lined strainer and set over a bowl. You want to strainer to kind of hover over the bowl, instead of resting in it. Let his stand in the refrigerator for 2 hours or over night. Discard the liquid.
About ten minutes before serving time heat a skillet over medium heat. Add the walnuts and toast, shaking the pan often, until the nuts are fragrant. This should be about 6 to 7 minutes.
When the walnuts are toasted spoon the yogurt cheese into six bowls.
Top each serving with warmed honey and the toasted walnuts.
This is best eaten right away.
Hash brown Casserole
Serves 6 to 8
1/4 cup melted butter
1 cup sour cream
3 green onions
1 1/2 cups shredded Cheddar
26 to 30 ounces frozen, shredded hash browns
Preheat the oven to 350F.
combine the melted butter and sour cream in a large bowl. Cut off the root ends of the onions and thinly slice the white and about 1 inch of the green parts. Add the slightly thawed hash browns and stir until they are coated with the mixture.
Press the mixture into an ungreased 9-inch-square pan or a 9 by 5-inch loaf pan.
bake for 1 hour.
I then baked about 2-inch round mounds of grated Parmesan cheese in the oven' already at 350F' for about 10 minutes. And then served them with a salad and Italian dressing.
Finally I used a gluten free brownie mix, and home made gluten free fudge frosting.
Easy fudge frosting
makes 2 cups
8 ounces semisweet chocolate, chopped
1 cup evaporated milk
3/4 cup sugar
Melt the chocolate over hot water.
Heat the milk in a small sauce pan. whisk the sugar into the heated milk and whisk until it is dissolved. Whisk the melted chocolate into the hot milk. Using an electric mixer, beat until cool.

did anyone ever think Sylvia Plath wasn’t crazy, she was just cold.


I intended to post last night, but I ended up hanging out at a friends house for most of the evening.
On Monday schools in town had a two hour early release because of snow, which means I didn't have to go to work. It snowed through the night and school was canceled for Tuesday, which means I still didn't have to go to work.
Unfortunately as a home schooler I don't really have snow days. So my little brother and sister enjoyed not having school, while I was slaving away.
However, since I had no work I was able to help work on the library's latest fundraiser, as well as get some much needed sleep.
So the snow day and half was much appreciated.
While at my friend's house last night I was introduced to a new cooking blog called smitten kitchen. I had the peanut butter brownies from the blog and I think they are great. I suggest you all check it out.

be cool sado-pop

In honor of the super bowl, I thought I would share a Mexican dip.
This is one of my favorite, as well as the easiest things to make.
7-Layer Mexican Dip:
8 oz. cream cheese
1 tablespoon taco seasoning mix
1 cup refried beans
1 cup salsa
1 cup shredded cheese
1 cup shredded lettuce
1/2 cup green onions
Soften the cream cheese a bit, then add the seasoning
Spread the cream cheese mixture in the bottom of a 9-inch pie plate.
Add the rest of the ingredients in the order above.
Store in the fridge.

All in all not a bad week thus far.
I got all of my school work done, and will therefore not be doing any this weekend.
I finished two of my projects.
And got most of my to do list done before the weekend.
I have to say this week is shaping up nicely, and I hope the same is true for you guys.

I intend to live forever, or die trying.

I am currently eating Taquitos and looking at this week's weather forecast.
It looks like I am be able to spend some time outside this week. True, it only feels like 5º, but at least we are out of the negatives.
Last week I got a great deal of school done, I also a good amount of things checked off my list. And I spent the weekend working on my senior portfolio.
I am taking some of my clothing designs and turning them into a portfolio. I have never done this before, and so kind of learning as I go.
I have high hopes for this week.
There is nothing out of the ordinary planned, so I will be able to focus on school. Which is what I should be doing.
