I have been taking sooooooooooo many pictures with my new camera.
The bad thing is, I can't post any of them
Because I can't plug anything into the USB port. It's driving me nuts.
I have also been doing alot of sewing lately. And I promise put up some pictures as soon as I find a way.
Other than taking pictures, I haven't been doing much.
I do, however, have a few of my favorite recipes to share.
My first is a broccoli and cheese soup.
½ bunch of broccoli
3 tablespoons butter
3 tablespoons flour
4 cups milk
4 slices American cheese
Salt and pepper
¼ cup shredded cheese
1. Bring a large saucepan of water to a boil. Cut the broccoli florets from the stems and discard the stems. Cut the florets into bite-size pieces and cook in the boiling water for 5 minutes, or until slightly crunch. Drain and set aside.
2. Melt the butter in the same saucepan over medium heat and stir in the flour. Cook until bubbly. Add 1 cup of the milk and stir until smooth. Add the remaining 3 cups of milk and cook, stirring occasionally until it just begins to boil.
3. Reduce the heat to low and add the American cheese, stirring until it is completely melted. Season to taste with salt and pepper. Reserve 4 of the broccoli florets for garnish and stir in the remaining broccoli into the soup.
4. Ladle the soup into 4 bowls. Sprinkle some of the cheddar in the center of each bowl and top with a piece of broccoli.
Serves 4
And second is banana bread.
½ cup butter
1 cup sugar
2 eggs
3 medium bananas
1 teaspoon baking soda
½ teaspoon salt
2 cups flour
1. Preheat the oven to 375F. Lightly butter or spray the side and bottom of a 9-inch loaf pan.
2. Place the butter and sugar in a large mixing and beat with an electric mixer on low speed until the sugar is completely mixed into the butter. Add in eggs and mix until the batter is smooth. Mix in bananas until there are no large chunks remain. The batter will be lumpy, but the pieces of banana should all be ½ inches or smaller.
3. Add baking soda and salt and mix on low speed until combined. Add the flour and mix on low speed, scraping the sides of the bowl occasionally, until all the flour is incorporated.
4. Pour the batter into the loaf pan and bake for 15 minutes. Reduce the oven heat to 350F and bake for 45 minutes, or until toothpick inserted in the center of the loaf comes out clean.
5. Remove the bread for the pan and let cool on rack.
